I did it. Didn’t heed my own advice. I let myself get too busy without making sure I had eaten enough. So what happened? I walked into my apartment and went straight to the kitchen, ready to inhale whatever I could find. And that’s not good, considering we have a plate of chocolate chocolate-chip cookies sitting out on the counter!
Fortunately for me, I had thrown together some kale with some tasty flavorings and stuck it in the dehydrator before leaving this morning. So what was the first thing I came across to stuff down my face? Kale chips! And wow did they go down fast. Note to self: no matter how healthy the food that you are eating may be, you can still eat it too quickly. Ugh. Paying for that now. But nonetheless, I got some serious healthy goodness in the process, whereas I could have been shoveling in sugary sweet cookies. So what are the lessons here? One, always keep healthy snacks in the house that are really easy to grab when you’re in a hurry. And two, it is SO easy to eat your greens, even if you don’t particularly like them as is – they can be quick AND scrumptious.
I found a really easy recipe for kale chips that wound up being absolutely delicious. (I made it without the scallions as I didn’t have any on hand at the time.) Note that if you don’t have a dehydrator you can make these in the oven.
2 bunches kale, broken into large pieces by hand (preferably dino kale)
¾ cups sesame tahini
¼ cup nama shoyu
½ cup apple cider vinegar
½ cup water ~ more if needed
1 clove garlic
1 lemon, juiced
¼ t. sea salt
¼ cup fresh parsley
Place kale in a large mixing bowl. Combine all ingredients in a blender and blend until smooth to get a thick consistency. You may have to add more water. Pour over kale and mix thoroughly with your hands to coat the kale.
Place kale onto a Teflex sheet, on top of a mesh dehydrator screen, and dehydrate for 4 hours @ 110 degrees.
It wasn’t easy to choose, there are a zillion of them out there to be found – good news, you can experiment with them until you find one that suits you! There are many many people who don’t like the taste of kale, but I challenge even those people to try these and not like them! My husband is going to be put to that test as soon as he walks in the door this evening…
Another fantastically easy way to make greens taste good is sticking them into smoothies. I know this is not new news to anyone, but what you might not know is how incredibly easy it is to make them taste good. You can throw almost anything in there – kale, chard, spinach, you name it! – if you just throw in a couple blueberries and/or a little banana or apple to sweeten it up. It may still be green but it is sweet and delightful. My husband, who does NOT like kale if you hadn’t gathered that yet, has already been through this test. He loves his morning smoothies. He just doesn’t ask what’s in them!
This one had a little bit of coconut water, chard, spinach, cucumber, parsley and blueberries. (I think I’d had enough kale for one day.)
